High fructose rice starch-based syrup (HFRSS)

High fructose syrup is the syrup with 42% (above to 55%) fructose processed from rice starch after a-amylase liquefying, glucoamylase saccharifying, decolorizing, filtering, ion exchanging then isomerizating by immobilized enzyme.

1.       Characterization:

Its colorless, odorless, good fluidity and easy to use. On medicine, it can restrain inner protein consumption and have the effect to protect the liver.

In food processing it can substitute for cane sugar which has some advantages.

(1)     The colder it is, the sweeter it will be.

(2)     It wouldnt cover the natural flavors.

(3)     Good penetration.

(4)     Excellent moisture absorption.

(5)     Lower freezing point.

(6)     Good fermentation capacity.

2.       Applications:

Fructose is widely used in beverages, carbonated drinks, fruit drinks, breads, cakes, tinned fruits, jams, succades, dairy foods etc.
